My pickled Jalapeno Peppers and home grown Garlic in Olive oil

One if my passions is my love of Hot Chilli and 'Garlicky' Spicy Foods, some of which I share
with you and have been evolved by exciting - ha! experimentation, being from Med Hot to Hot.
I include some American recipes which I have taken a liking to on my visits to friends in the USA.

8. Don’s Thick Scotch Broth Soup.

1.Lentil, Aduki or any other Pulse (Bean) Dhal or Dal pronounced 'Dahl'. --- (23 March 2005)
Goes well with all curry dishes.

Ingredients
1cup--------Dried Lentil or Aduki Beans pre-soaked as recommended
1or2--------Onions Chopped
3+----------Cloves Garlic chopped
3cms--------Root Ginger grated
2Tbs -------Oil, I used Peanut oil
1tps---------Garam Masala
1tps---------Paprika
2tps---------Tumeric
1tps---------Seasoned Salt
1.5cups-----Vegetable stock cube in boiling water.

Method:
Heat Oil add Onion, Ginger and Garlic, then Garam Masala, Tumeric and Paprika,
stir then add Stock, Seasoned Salt and Beans.
Simmer on V low heat for 2 hours, you may have to add another 1/2 cup water.
Beans may be mashed, the end result should be a thick mushy soup or puree.

2. Thai Chicken Curry March 2005.

Spicy and Aromatic with Star Anise, Cinnamon, Cardamom etc.

Ingredients

2lb-----------chicken breast
50ml----------Peanut/vegetable oil
1- 4cm--------piece fresh root ginger
5-15----------garlic cloves
1-2-----------large onion
1-3-----------cinnamon stick
2-5-----------whole brown cardamom pods
4-7-----------whole green cardamom pods
2-5-----------whole star anise
7-15----------black peppercorns
6-10----------cloves
2tsp----------turmeric
1-2 tsp-------chilli powder
2-5-----------green chillies chopped small pieces
150ml---------Plain yoghurt
1tps----------Seasoned Salt to taste
--------------Fresh coriander leaves (optional)
1 Chicken stock cube in 1 cup boiling water

Use Ingredients as desired, I use max for my fairly hot spiced Thai Curry.

Method:

(1)------Grate the ginger, chop onions and crush the garlic
(2)------Heat oil in a large pot add onions, cinnamon stick, cardamom pods,
star aniseed, peppercorns, cloves, garlic and ginger
(3)------Add the cut chicken pieces, turmeric,
and chilli powder and cook on a medium/low heat, stirring often
(4)------Add the Yoghurt, Chicken stock and simmer on
low heat and reduce as required.
Finally, add the fresh coriander leaves.
Serve with Thai fragrant “Sticky” Rice.

3.Mrs Low's Recipe for Pickled Jalapeno Peppers. June 2003 Amdt 09 Oct 2005 These ingredients listed are just right to fill a 3/4 litre Kilner preserving Jar. 1.5 lb Jalapeno Peppers 1 cup white vinegar 1/4 cup olive oil 1/4 cup water 1 tsp salt 1 tsp pickling spice Method:
Wash whole peppers and dry, cut stalk end off and slice in half longways or slice across in approx 1/4" rings. Discard seeds - dependent on taste!! I find that cutting longways is best for scooping out the seeds. Put vinegar, oil, water salt and spices in large pan and boil then
add cut peppers for short time turning over to just scald, turn off heat. Scald Kilner jar with boiling water, empty and fill jar with
peppers and boiled liquid to 1" to top of jar and seal. Mature for a few weeks. Note: Preparing Jalapeno Peppers cause irritation of the skin so wear rubber gloves when
cutting these peppers and PLEASE don't touch the eyes or any other sensitive part of the body!!!

4.Don’s American Meatloaf. Ingredients
1 lb Minced/Ground Beefsteak 3/8 cup Oatmeal or Breadcrumbs – just under 1/2 cup 1 Onion chopped 2 Garlic cloves chopped 1/4 cup Catsup aka Ketchup UK (not Catnip) 1 – 2 teas Horseradish 1/2 teas Mustard 1 Egg 1 Good dash of Worcester sauce 1/2 teas Cajun spice 1/2 teas Seasoned Salt 1/2 teas Ground pepper 2 teas Liquid Smoke Sauce: 1/4 cup Catsup 1 Tble Brown sugar 2 teas Horseradish 1 teas Mustard Method:
Mix all ingredients in large bowl, shape into loaf 6.5 by 3.5 inches,
bake in greased broiler/baking dish for 40 mins at 350 deg Gas mark 4. Mix sauce, pour over Meatloaf and bake for additional 5 - 10 mins. Enjoy. Don’s Goodgrub Inc. 17 June 2004 Amdt - 29 Aug 2004.

5. Fish Chowder serves 2 31st July 2004. Ingredients
1.5 pound fresh fish (smoked) fillets 2 cups pared cubed potatoes 2 tsp salt 1/2 teaspoon pepper 1 chopped onion 1 crushed Garlic 2 cups milk 3 Tbs flour 2 tsp oil Method: Cut fish into 2-inch pieces.
Cook potatoes in 2 cups water for 5 minutes.
Add fish, salt and pepper. Simmer, covered; for 2-3 mins.
Fry onion until crisp
add to fish mixture. Slowly blend milk into flour;
add to chowder. Cook, stirring constantly until mixture thickens, serve.

Fish Potato Pie serves 2 25th Feb 04. Ingredients
1.5 lb Fresh fish (smoked tastes best) and/or mix shellfish 1 cup Fish stock and milk 1 Tbs Oil 1 Tbs Flour 2 tsp Lemon juice Garlic, Onion or Both!! Salt and pepper Hot mashed potatoes Cheese for grating Parsley Method:
Removing skin and bones from fish and cube. Put into a pan,
cover with boiling water and simmer till fish is just tender. NOTE: Do not overdo fish - a minute or two is adequate. Drain, measure liquid and add milk to make 1 cup.
Fry garlic or onion in oil. Add flour, stir, add milk and stock mixture, Simmer and stir till slightly
thickish and add fish, Garlic, seasonings etc and some of the parsley. Cover top with mashed potatoes, grated cheese and bake at 425°
until browned for about 15 minutes, sprinkle rest of parsley on top and serve. Should have some gravy when served, ie not too dry.

6. Don’s own Beef and Cabbage Jambalaya. 08 Feb 2005 Amdt. April 2005. Ingredients
1 lb Minced or small cubed Beef 0.5 lbs Smoked Sausage or Smoked Lardons - small Bacon pieces 1 Large onion 2 Celery sticks 5 Cloves garlic 2 Tbs Peanut or vegetable oil 1 Tbs Cajon spice or Piri Piri spice 4 Chillies chopped 2 tps Chilli seeds 1 Tin Chopped tomatoes 1 Meat or Chicken stock cube in boiling water 1 Head of Cabbage 1 cup White USA long grain rice Chopped fresh parsley Method:
All that lot above is simmering just now in a big stewpot and later nearer
suppertime I will chop the cabbage, and add it to the Jambalaya with a
cupfull of long grain American rice. Keep simmering until rice is cooked. Please don't ask me the exact quantities I put in of each ingredient – just add "too taste" esp with the Chilli and Spices ha.

7. Don’s recipe for Cowboy Pinto Beans.
For a change try an Englishman’s recipe for spicy homemade Oklahoma Cowboy Style Pinto Beans. Ingredients
Note: 500 g = approx 1.1 lb; 1 pint Water = 20 fl ozs. 2 pints water + extra towards end of cooking if necessary, should be "juicy" 500 g dried Pinto Beans - wash well and pre-soak overnight or as recommended 250 g smoked bacon pieces - Lardons - or chopped rashers 3 chopped onions 5 chopped garlic cloves 3 Tbs olive oil 2 tsp course black pepper 3 tsp Liquid Smoke (Old Dakota) 1 Good dash of Worcestershire Sauce 2 tsp seasoned salt Method:
Heat the Oil in large cook-pot add the Bacon, Onions, Garlic and stir-fry,
add all the other ingredients and bring to the boil and simmer slowly,
stirring occasionally, for approx 2.5 to 3 hrs.
A good portion of Jalapeno Chillies also enhances the flavour particularly when
eaten with a large portion of Meat Loaf and mashed Garlic Potatoes. Enjoy. Don’s Goodgrub Inc. June 04 - amdt 07 August 05.

8. Don’s Thick Scotch Broth Soup.
Ingredients: 2-3 Tbs Olive or Veg oil 2-3 Onions diced 3-5 Garlic Cloves diced 300gms (2/3 lb) Smoked Bacon Cordons/cut up Streaky Bacon or Diced Lamb 3 Potatoes diced 3 Carrots diced 2 Stalks Celery diced 1 Cup Pearl Barley 1 Cup Split Red Lentils 1 Cup Country Soup mix- various dried pulses 1 x 14 oz Tin Tomatoes or Fresh Toms cut up 4 Pints water add during cooking Good bunch fresh Parsley cut up, Seasoned salt, Worcester sauce.
The ingredients can be varied of course.
Method: Wash and soak Pulses as directed. Heat oil in large cook pot, fry Onions, Garlic and Bacon, add Potatoes, Carrots and Celery,
cook a while then add Barley Lentils, Soup mix, Tomatoes, 3 pints water, 1/2 of the Parsley,
and salt, cover top of cook pot and simmer gently for about 3 hours add remaining water
as the pulses swell. Add rest of Parsley and Worcester after 2 1/2 hours.
Enjoy with crusty bread and Garlic butter.
The above quantities serves maybe up to 8 persons, Freeze remainder.
